Basic Foundation Recipes for Amba

AMBA BASICS:
Amba is used to add an extraordinarily complex flavor to many dishes. It is used as a sauce in rice dishes; as a condiment on sandwiches and gyros; alone as a spread on bread; as a condiment or dipping sauce for eggs, meat, and tofu; and as a marinade for meats. The sophistication of taste is in the Amba sauce so you can turn any simple, easy, and healthy (e.g. steamed/ low calorie) meal into a remarkable cultural delicacy by simply adding Amba. Amba is also traditionally used on shawarma and sabiche. Amba is a condiment like mustard or soy sauce and thus it is used to add flavor and vitality to dishes and not meant to be eaten by itself. Amba is a fermented product made of green tangy unripe mangos and is naturally probiotic, low calorie, low carbohydrate, low fat, and low sugar. Its main spice is turmeric which also adds to the health benefits of this ancient sauce.

Middle Eastern Sandwich
Ingredients:
Pick a Protein: Sliced Beef, or Sliced Lamb, or Sliced Hard Boiled Eggs, or Falafel, or Sliced Tofu
Israeli Amba
Pick a Bread: Pita Bread, Syrian Flat Bread, American Sandwich Bread, or Bread of your choice
Fresh thin sliced Lettuce, Cucumbers, Onions, and Tomatoes   
Directions:
Spread Amba (as thick or thin as you like) on the bread and then assemble sandwich using remaining ingredients in quantities to your liking.


Middle Eastern Rice Amba Dish
Ingredients:
Rice (White Jasmine or Brown)
Israeli Amba OR Indian Amba (but not both)
Pick a Protein: Chicken, Beef, Lamb, Hard Boiled Eggs, Tofu, or Tempeh
Veggies of choice (onions, eggplants, kale, and okra work well)
Directions:
Cook rice according to instructions. Sauté meat and veggies in olive oil and a little garlic. For less calories, instead of sautéing meat and veggies, you can steam veggies and steam or roast the meat. Assemble dish with rice, meat, and veggies in a bowl and add Amba sauce on top. The complexity of taste is in the Amba so you can turn a bland, simple, low calorie, and easy meal into a sophisticated cultural delicacy by simply adding Amba.

Indian Dog
Ingredients
Regular Cream Cheese
Indian Amba (NOT Israeli Amba)
Hot Dog or Tofu Dog
Flat Bread or Wrap of your choice
Directions:
Cook hot dog according to directions. Spread a thin layer of cream cheese all over flat bread or wrap. Spread a layer of Indian Amba over the layer of cream cheese. Roll hot dog up inside wrap with cream cheese and Indian Amba. 

Amba Beef, Lamb, Chicken, or Tofu
Ingredients:
Pick a Protein: Beef, Lamb, Chicken, or Tofu
Israeli Amba
Directions:
Marinate meat or tofu in Amba sauce overnight. Grill or roast meat to your liking.
